How to make Stilton Stuffed Mushrooms With A Hint Of Red Wine

 You know it is coming Christmas when the Stilton comes out, and any left over sits well on cream crackers afterwards - for me anyway! You have got to use the freshest breakfast (large) mushrooms for this recipe. You can make your own breadcrumbs or you can buy them, up to you. This is a very simple yet delicious recipe, using just stilton, mushrooms, butter, garlic, onion and wholemeal bread and a little red wine. If you find stilton cheese a little strong you could probably use blue cheese instead. You can serve these with a side salad as a main meal, or with chips and carrots say, or you can serve one as a starter with a small side salad. Mushrooms are fat free and low calorie too, for the health conscious out there!!

How to make Quick and Easy Mushroom Stroganoff

 If you want a meal in minutes then this is the one for you. Now we usually serve it in a small side dish with perhaps new potatoes and vegetables like cabbage, brussels, carrots etc, but you can still have it with the rice as featured too if you want to. Always use the freshest white mushrooms for this and the freshest parsley. The wholegrain mustard tastes amazing and I now make this recipe using crème fraiche which is thicker and better tasting than the soured cream. Make sure that the mixture is well reduced before serving - the thicker the better! The featured picture does not do this recipe justice because it tastes far better than it looks on here.

How to make a quick and easy Mushroom Pilau

This mushroom pilau is like a mini biryani style dish. It is made with basmati rice, mushrooms etc, curry paste and all topped off with a chopped up omelette. This dish is so simple to make and quick too. It is a really good tasting Indian style dish, and you could even add a curry sauce to it if you wanted. Vegans can leave out the omelette and it still tastes good!!

How to make a Red Pepper and Mushroom Sausage Casserole (Vegan friendly)

Who doesn't like a sausage casserole, especially when the nights draw in and you know that winter is now approaching. This is a one pot dish so just throw everything in and simply cook in the oven. I got the idea from a ladies magazine whilst in the hairdressers. I simply changed the sausages, made use of an onion gravy, altered the mushroom and red pepper quantities and ended up with this! The Bisto onion gravy in the glass jar works well with this but I suppose you could try the red onion gravy in a jar that is less expensive too, as I have also tried this gravy before on things and it is very flavoursome as well. Just check that it has quite a good thickness before you put it in. Otherwise add a little more powder. We like this with a good helping of mashed potatoes to soak up all the juices. I found the Linda McCartney sausages worked the very best in here, but I have made it with the other brands too. You can also serve it with new potatoes if you like....

How to make Garlic Mushrooms with or without Mozzarella.

Who doesn't like garlic mushrooms? If you haven't made this yet its quite easy and tasty. Make sure that the garlic cloves are a good size in here. This is as good with or without the Mozzarella. Use the closed cup or button mushrooms, and same again, only fresh and white ones. Use the curly parsley in here too, not the flat leaf, as the curly parsley has a far superior taste! I like this with the Lurpak or Kerrygold, but again use your favourite butter. We usually have this with maybe a fresh salad, and garlic bread can be good here too, to mop up the juices,,,,

How to make Vegetarian Quorn Spaghetti Bolognese.

A friend suggested this recipe to me, and I tried it. Then I changed the mushrooms, removed the salt, topped up the garlic, and Voila! It was the first time that I had made Spaghetti Bolognese at home. It's tasty and you can feed a crowd with it. A one pot meal. Sometimes I grate a little vegetarian hard cheese, (parmesan style) over it, if I make it for guests, and this has been a staple in our house for years. This Spaghetti Bolognese works well with the Quorn because it has a mince style texture. For those who don't want egg - as Quorn contains egg white, both Asda and Sainsbury's plant based mince works well too but always remember to fry it for 5 mins first before you add it to the pan, like with the Quorn. Don't worry to if you haven't got any garlic powder in, just use two good sized garlic cloves instead of one - just as good!  The image picture featured doesn't do this meal justice, as it really does taste delicious. How to make a Sweet potato chilli with celery, chestnut mushrooms and tabasco. (Vegan Friendly)

This recipe started as a recipe in a newspaper. There was a large amount of tabasco sauce  in it and no liquid, so when i made it it was unpalatable, but i saw the potential. Adding more mushrooms, drastically reducing the tabasco sauce content, and adding vegetable stock and more mushrooms. The resulting effect was really tasty. Guests always ask for more whenever i make this - so if you haven't tried it yet, definitely do at some stage. Don't be put off with the sweet potato, because in this recipe it tastes nothing like it does normally! Be careful with the tabasco sauce though and use a small teaspoon not a regular sized one!! And don't forget to shake up your tabasco sauce bottle before you use it. We serve this chilli with either basmati rice, chips or fresh salad.
